This unique Merlot shows intense aromas of dried red fruits, blueberry and cherry with hints of chocolate and jam and pleasant spicy notes of clove and vanilla. It is medium-full-bodied with firm but soft, round tannins. 100% Merlot grapes partially dried on the vine and further dried in the winery, in a similar way to how Amarone is produced. Vinification takes place in Ganimede fermenters, which uses the carbon dioxide gas that is generated during fermentation, where the grape skins and wine are continuously mixed in order to extract colour and tannins, aged partly in stainless-steel tanks, and partly in large oak casks for 12 months.
